This legendary restaurant in Council Grove (1 1/2 hours NE of Wichita on US-177) was originally opened by the great grandson of Daniel Boone. His name was Seth Hays and he built it as a hotel and restaurant, right along the Santa Fe Trail so he could reach travelers along the route.
It's now a National Historic Landmark, but in the 1850's, it was an essential stopping point along an incredibly important trade route in territorial America. The food is still legendary there. It's filled with incredible history and well worth the drive.
